Vinification

Only Chardonnay from four Côte des Blancs crus were selected to craft Joyau Chardonnay 2014: Avize, Le Mesnil-sur-Oger, Oger and Vertus. Only first press juice is used to craft this very great Champagne. After 10 years of ageing in the cellars, this 100% Chardonnay wine expresses all the personality of the Côte des Blancs vineyards and reveals its great ageing potential.

Tasting

A bright pale gold colour, shot through with a slight green iridescence. The bubbles are very fine. The nose is refined and elegant; it opens with fresh floral (hawthorn) and nutty (almond) aromas, underpinned by hints of citrus (grapefruit, lemon peel). The complexity of the aromatic range shines through with notes of pastry accentuated by very delicate minerality. On the palate, the wine is dense and ample, with a clean and balanced structure. The year’s characteristic freshness and vivacity are very much in evidence and combine harmoniously with the mineral, almost saline notes and generous, toasted aromas (grilled hazelnuts, brioche). The finish is persistent and fresh, with a racy minerality.

Food & wine pairing

Joyau Chardonnay 2014 is a perfect match for seafood and simply cooked fish: Plancha-cooked scallops, turbot with fennel, Arctic char with fresh vegetables, and also with free-range poultry, roasted or in a casserole (Bresse fattened chicken with herbs).
