Vinification

Unlike the rest of the Montagne de Reims, which is predominantly planted with Pinot Noir, Villers-Marmery stands out with its east-facing slopes, where Chardonnay thrives on pure chalky soil, offering freshness and tension. This uniqueness gives birth to wines of great finesse, marked by beautiful acidity and a precise minerality, while maintaining a fleshy and delicate character.

Tasting

The colour is pale gold with slightly greenish reflections, displaying beautiful brilliance. The effervescence is fine and persistent, forming an elegant bead.

The nose is delicate and airy, it opens with floral notes of acacia, hawthorn, and linden, evolving towards more indulgent aromas of fresh brioche, toasted almonds, and acacia honey. Zesty nuances of lemon and grapefruit add a refreshing touch.

On the palate, the attack is lively and taut, immediately revealing the chalky signature of the terroir. The texture is silky, supported by a beautiful breadth and a mouthfeel of great elegance. Candied citrus, fresh hazelnut, and a touch of salinity blend harmoniously leading to a long, refreshing finish marked by mineral and saline tension.

Its freshness and precision make it the perfect companion for seafood (oysters, langoustines, scallop carpaccio) or white fish ceviche. It will also pair wonderfully with fresh, creamy cheeses such as ash-covered goat cheese or Brillat-Savarin.
